Preheat the oven to 350 degrees.
In an electric mixer bowl using a paddle accessory, beat the butter, and both sugars.
Beat in the salt, vanilla, eggs, and ube extract until well combined.
In a separate bowl, whisk the flour and baking soda.
Mix in the flour mixture until just combined.
Add and stir in the white chocolate chips and macadamia nuts.
Using a 1" ice cream scoop, drop a ball of dough 1-2 inches apart in a parchment-lined baking tray.
Bake the cookies for 9-10 minutes.
Let the ube cookies cool on a cooling rack.
