Prep your ingredients. MISE EN PLACE
Get the corn, peas, and carrots out of the freezer to thaw out for a few minutes. Run them under hot water for 1 minute using a sieve or a colander. Set aside.
Mince the garlic. Cut and separate the green onions. White is for sautéing and green is for garnishing.
Whisk 2 eggs. Set aside.
Take your spam out of the can and cut it into ½-inch cubes.
In a small bowl, make your musubi sauce. Combine soy sauce, sugar, and water.
In a wok, on medium-high heat, fry up the spam cubes until crispy. 2 minutes then remove and set aside.
Add some oil and sauté the white part of the green onion and garlic until fragrant and golden brown.
Add in the cold rice and break it up in the wok and fry it until it is fried and ready. Season your rice with salt and white pepper.
Make a well in the middle of the rice. Add some more avocado oil, add the eggs, let it cook for a minute, and mix it in with the rice.
Move the rice and eggs to one side of the pan, add a little more oil, and add the corn, carrots, and peas. Let the vegetables cook for 2 minutes and combine everything.
Add back the spam. Mix well.
Drizzle sesame oil at the very end.
Garnish with green onions, nori pieces, and a drizzle of sriracha.
