Orange Glazed Asian Turkey Meatballs

ZERO BREADCRUMBS, I used grated zucchini to make it moister. I used mandarin oranges for the sticky sauce and it came out so good.
These baked meatballs recipe is not only healthy but it's great for meal prep and it is totally freezable.

Ingredients
  

Meatballs
  • 1-½ lbs lean ground turkey
  • 1 cup of grated zucchini
  • 1 cup of almond flour
  • 1 inch grated fresh ginger
  • Zest and juice of 1 orange mandarin
  • 2 cloves minced garlic
  • 1 minced shallot
  • 2 tablespoon sweet Thai chili
  • 1 tablespoon chicken bouillon organic
  • 2 tablespoon dark soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon oyster sauce
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 egg
  • Glaze
  • Zest and juice of 4 oranges
  • 2 cloves minced garlic
  • 2 tablespoon dark soy sauce
  • 2 tablespoon sweet Thai chili
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Cornstarch slurry mixture of water and cornstarch to make the glaze thick
  • Garnish optional
  • Sliced green onions
  • Sesame seeds

Method
 

  1. Set oven temperature to 375 degrees.
  2. In a large bowl combine all the meatball ingredients. Only mix until it is fully incorporated. Do not overmix.
  3. Line your baking tray with parchment paper (optional).
  4. Using a cookie scoop, spoon equal-sized, round portions of the ground turkey mixture onto your prepared baking sheet in a single layer.
  5. Bake for 45 minutes or until the internal temperature is 165 degrees.
  6. Make your glaze. Add all your sauce ingredients to a small saucepan, and simmer until it is thick and your desired consistency. 3 minutes.
  7. Drizzle the sauce onto your meatballs and put them back in the oven for 5 minutes.
  8. Garnish with green onions and sesame seeds; Serve and enjoy!

Notes

Garnish: sesame seeds, green onions
Air fryer: Preheat to 325 degrees. Bake for 25 minutes until the internal temperature is 165 degrees.
You can also pan fry these in a large skillet and pour in the glaze during the last 3 minutes of cooking.
