Lemon Butter Air Fryer Chicken Skewers (Chicken Kabobs)

These succulent Lemon Butter Chicken Skewers, are prepared effortlessly in your air fryer. Air fryer chicken kabobs are such an easy and fun way to prepare chicken. They are delicious and take no time to prepare. The best part is it is ready in less than 30 minutes!

Ingredients
  

  • For the Chicken Skewers:
  • 8 pieces skinless boneless chicken thighs (cut into 2” cubes)
  • 1 tablespoon lemon pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon neutral oil
  • 1 teaspoon salt
  • You will also need:
  • 4 - 6 wooden skewers soak 30 minutes before using
  • For the Lemon Butter sauce:
  • ¼ cup 1 stick of room-temperature butter
  • 1 tsbp garlic powder
  • 1 teaspoon lemon pepper
  • Pinch of salt and pepper
  • 1 whole lemon zest
  • 2 tablespoon of lemon juice
  • 1 tablespoon of honey
  • Minced parsley for color and garnish

Method
 

  1. Step 1: Preparing the Chicken Skewers
  2. Cut the skinless, boneless chicken thighs into 2-inch cubes.
  3. In a bowl, combine lemon pepper, garlic powder, neutral oil, and salt.
  4. Toss the chicken cubes in the seasoning mixture until they are evenly coated.
  5. Thread the marinated chicken pieces onto wooden skewers, ensuring they're snug but not crowded.

  7. Step 2: Air Frying the Chicken Skewers
  8. Preheat the air fryer at 400 degrees.
  9. Place the chicken skewers in the air fryer basket, ensuring they are not touching.
  10. Air fry for 12-15 minutes, turning the skewers halfway through, until the chicken is golden brown and cooked through.

  12. Step 3: Making the Lemon Butter Sauce
  13. In a microwave-safe bowl, melt the room-temperature butter.
  14. Stir in garlic powder, lemon pepper, a pinch of salt and pepper, lemon zest, lemon juice, and honey.
  15. Mix until the ingredients are well combined, and the sauce is smooth.

  17. Step 4: Serving 
  18. Once the chicken skewers are done, remove them from the air fryer.
  19. Baste them with the Lemon Butter sauce over the hot chicken kabobs.
  20. Garnish with minced parsley for a burst of color and freshness.

Notes

  • Soak wooden skewers for 30 minutes before or longer to prevent the wood from burning.  
  • Even Skewering: When threading the chicken onto the wooden skewers, ensure that the pieces are evenly sized and spaced to promote uniform cooking. Avoid overcrowding the skewers, as this can lead to uneven cooking and potentially undercooked or overcooked sections.  
  • GRILLING: You can make a larger batch by grilling the chicken skewers. Follow the same steps. Grill, then baste with the lemon butter sauce afterward.
