These Lemon Blueberry Overnight Oats are here to make your mornings way easier and a whole lot tastier. Creamy, tangy, and perfectly sweet, they’re loaded with juicy blueberries and a bright pop of lemon zest. It’s a no-fuss, mix-it-and-leave-it breakfast that’ll have you saying goodbye to those morning rush struggles. Just stir, chill, and dive in!

Ingredients
  

  • 1 cup blueberries fresh or frozen
  • 1 cup rolled oats
  • 2 cups milk of choice
  • cup Greek yogurt
  • 3 tablespoon chia seeds
  • Zest of 1 lemon
  • 2 tablespoon lemon juice
  • 2 tablespoon maple syrup
  • ½ teaspoon cinnamon
  • Pinch of salt

Method
 

  1. Mix Ingredients: In a large mixing bowl or jar, combine rolled oats, milk, Greek yogurt, chia seeds, lemon zest, lemon juice, maple syrup, cinnamon, and salt. Stir well until all ingredients are fully combined.
  2. Add Fresh Blueberries: Gently fold in the blueberries, reserving a few for garnish if desired.
  3. Refrigerate: Cover the bowl or jar and refrigerate for at least 4 hours, or preferably overnight, to let the oats and chia seeds soak and thicken.
  4. Stir: In the morning, give the oats a good stir. If needed, add a splash of more milk to reach your desired consistency.
  5. Serve: Serve in bowls or jars, topped with additional blueberries or a sprinkle of lemon zest for a bright finish. Enjoy!

Notes

  • Mix the Right Ratios: Aim for equal parts oats and liquid for a creamy texture. Too much liquid? You’ll get soup; too little, and it’ll be thick and dry.
  • Add Flavor Boosters: A pinch of salt, a dash of cinnamon, or a little sweetener can make a big difference. Don’t skip these small flavor boosts!
  • Let Them Chill: Refrigerate for at least 4 hours or overnight. This gives the oats time to soften and absorb all the flavors.
