Filipino Chicken Adobo Wings (Air fried or Grilled)

These Adobo Wings are the best chicken wings I have ever made. This adobo wings recipe will blow your mind. You can either air fry or grill. A true crown pleaser!

Ingredients
  

  • 2 lb split chicken wings
  • Adobo Wings Marinade
  • ¼ cup white vinegar
  • ¼ cup brown sugar
  • 3 tablespoon low-sodium soy sauce
  • 2 tablespoon sweet dark soy kecap manis
  • 5 smashed garlic cloves
  • 3 bay leaves
  • 1 teaspoon black peppercorn lightly crushed

Method
 

Prepare the Chicken Adobo Wings Marinade:
  1. In a large bowl or container with a lid, combine the soy sauces, white vinegar, brown sugar, bay leaves, and lightly crushed black peppercorns. 
  2.  
Marinate the Adobo Chicken Wings:
  1. Using paper towel, pat the chicken wings dry. 
  2. Transfer wings to the container with the marinade. Toss to ensure all the wings are evenly coated.
  3. Cover the bowl with plastic wrap or transfer the wings and marinade to a large resealable plastic bag. Or cover it with the lid. 
  4. Marinate in the refrigerator for at least 2 hours, or overnight for the best flavor.

Air Fry the Wings:
  1. Preheat your air fryer to 400°F (200°C).
  2. Remove the chicken wings from the marinade, allowing any excess marinade to drip off.
  3. Arrange the wings in a single layer in the air fryer basket. You may need to cook them in batches to avoid overcrowding.
  4. Air fry for 25 minutes, shaking the basket or flipping the wings halfway through to ensure even cooking.
Grill the Wings:
  1. Preheat your grill to medium-low heat.
  2. Transfer the air-fried wings to the grill. Grill the adobo wings in indirect heat until the wings are crispy and have a nice char, about 40 minutes, turning occasionally to prevent burning and to ensure an even char.

Notes

Marinate overnight: For the best flavor, marinate the wings overnight in the refrigerator, allowing the marinade to penetrate the meat fully.
 
Avoid Overcrowding: When air frying or grilling, ensure the wings are in a single layer and not touching. This promotes even cooking and crispiness.
 
Use a Meat Thermometer: Use a meat thermometer to check that the internal temperature reaches 165°F (74°C).
