Prepare the Chicken Adobo Wings Marinade:
- In a large bowl or container with a lid, combine the soy sauces, white vinegar, brown sugar, bay leaves, and lightly crushed black peppercorns.
Marinate the Adobo Chicken Wings:
- Using paper towel, pat the chicken wings dry.
- Transfer wings to the container with the marinade. Toss to ensure all the wings are evenly coated.
- Cover the bowl with plastic wrap or transfer the wings and marinade to a large resealable plastic bag. Or cover it with the lid.
- Marinate in the refrigerator for at least 2 hours, or overnight for the best flavor.
Air Fry the Wings:
- Preheat your air fryer to 400°F (200°C).
- Remove the chicken wings from the marinade, allowing any excess marinade to drip off.
- Arrange the wings in a single layer in the air fryer basket. You may need to cook them in batches to avoid overcrowding.
- Air fry for 25 minutes, shaking the basket or flipping the wings halfway through to ensure even cooking.
Grill the Wings:
- Preheat your grill to medium-low heat.
- Transfer the air-fried wings to the grill. Grill the adobo wings in indirect heat until the wings are crispy and have a nice char, about 40 minutes, turning occasionally to prevent burning and to ensure an even char.
Notes
Marinate overnight: For the best flavor, marinate the wings overnight in the refrigerator, allowing the marinade to penetrate the meat fully.
Avoid Overcrowding: When air frying or grilling, ensure the wings are in a single layer and not touching. This promotes even cooking and crispiness.
Use a Meat Thermometer: Use a meat thermometer to check that the internal temperature reaches 165°F (74°C).
