Easy Shrimp Fried Rice Recipe - better than takeout

Ingredients
  

Shrimp:
  • 10-12 pieces of peeled and deveined shrimp
  • 1 tablespoon neutral oil
2 cloves of minced garlic Fried Rice:
  • 2 cups of day-old rice
  • 2 eggs lightly beaten
  • 1 cup of frozen vegetables corn, peas and carrots
  • 4 cloves of minced garlic
  • 2 stalks of green onions white and green parts separated
  • 2 tablespoon of neutral oil I used avocado oil
  • 2 tablespoon of soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon of butter

Method
 

  1. Step 1: Prepare the Ingredients
Prawns Prep:
  1. Ensure prawns are peeled and deveined.
  2. Season prawns with a pinch of salt and pepper.
Rice Prep:
  1. Use day-old rice for better texture.
  2. Break up any clumps to ensure even cooking.
Vegetable Prep:
  1. Dice green onions, separating the white and green parts.
  2. Step 2: Cook the Prawns
  3. Heat a wok or large skillet over medium-high heat.
  4. Add 2 tablespoons of neutral oil to the pan.
  5. Toss in minced garlic cloves.
  6. Add prawns and cook until they turn pink and opaque. 
  7. Remove prawns and set aside.
  8. Step 3: Rice and Eggs
  9. Add more oil to the pan. Saute the minced garlic until lighty golden brown. 
  10. Add the day-old rice to the wok, breaking up any clumps.
  11. Make a well in the middle. Add eggs into the well. 
  12. Scramble the eggs until just set.
  13. Mix the eggs with the rice. 
  14. Step 4: Stir-Fry the Vegetables
  15. Stir in white parts of the green onions.
  16. Add frozen vegetables and stir-fry until they are heated through.
  17. Step 5: Combine the Ingredients
  18. Pour soy sauce and sesame oil over the rice, stirring to combine.
  19. Add the cooked prawns and eggs back into the wok, mixing well.
  20. Toss in the green parts of the onions and 1 tablespoon of butter.
  21. Stir-fry everything together until well combined and heated through.
  22. Step 6: Serve and Enjoy
  23. Spoon the delicious shrimp fried rice onto serving plates.
  24. Garnish with extra green onions.

Notes

Mise en Place:
  • Prep Everything: Get the rice ready, chop ingredients, get fresh shrimp peeled & deveined and have everything ready to go as it cooks really quickly. 
 
Quick Cooking:
  • Hot Pan: Use a well-heated wok or skillet for that classic stir-fry taste.
  • Cook in Stages: Don't crowd the pan. Cook shrimp then the rice, eggs, vegetables, and so forth.
Season well:
  • It doesn’t need much but a little soy sauce, sesame oil, and white pepper can add a ton of umami to this dish.
