- Step 1: Prepare the Ingredients
Prawns Prep:
- Ensure prawns are peeled and deveined.
- Season prawns with a pinch of salt and pepper.
Rice Prep:
- Use day-old rice for better texture.
- Break up any clumps to ensure even cooking.
Vegetable Prep:
- Dice green onions, separating the white and green parts.
- Step 2: Cook the Prawns
- Heat a wok or large skillet over medium-high heat.
- Add 2 tablespoons of neutral oil to the pan.
- Toss in minced garlic cloves.
- Add prawns and cook until they turn pink and opaque.
- Remove prawns and set aside.
- Step 3: Rice and Eggs
- Add more oil to the pan. Saute the minced garlic until lighty golden brown.
- Add the day-old rice to the wok, breaking up any clumps.
- Make a well in the middle. Add eggs into the well.
- Scramble the eggs until just set.
- Mix the eggs with the rice.
- Step 4: Stir-Fry the Vegetables
- Stir in white parts of the green onions.
- Add frozen vegetables and stir-fry until they are heated through.
- Step 5: Combine the Ingredients
- Pour soy sauce and sesame oil over the rice, stirring to combine.
- Add the cooked prawns and eggs back into the wok, mixing well.
- Toss in the green parts of the onions and 1 tablespoon of butter.
- Stir-fry everything together until well combined and heated through.
- Step 6: Serve and Enjoy
- Spoon the delicious shrimp fried rice onto serving plates.
- Garnish with extra green onions.

Mise en Place:
- Prep Everything: Get the rice ready, chop ingredients, get fresh shrimp peeled & deveined and have everything ready to go as it cooks really quickly.
- Hot Pan: Use a well-heated wok or skillet for that classic stir-fry taste.
- Cook in Stages: Don't crowd the pan. Cook shrimp then the rice, eggs, vegetables, and so forth.
- It doesn’t need much but a little soy sauce, sesame oil, and white pepper can add a ton of umami to this dish.
