Easy One Pan Spanish Chicken and Rice with Chorizo

I love good chicken and rice recipes, especially when it only needs a single pot. This easy Spanish chicken and rice recipe is a dish you need in your life. This is the perfect weeknight meal full of tasty, bold flavors from the Spanish chorizo.

Ingredients
  

  • 6 chicken thighs bone-in skin on
  • 2 chorizo sausages casing removed
  • 1 cup of long-grain white rice rinsed
  • 2 cups of chicken broth or bone broth, or water
  • 1 red bell pepper julienned
  • 1 pint of cherry tomatoes halved
  • ½ red onions minced
  • 5 cloves of garlic minced
  • 1 teaspoon seasoning salt I used Hy’s Seasoning Salt
  • 1 lime wedged
  • 2 tablespoon of neutral oil I used grapeseed oil

Method
 

  1. *MISE EN PLACE: Prep all your ingredients, and make sure that everything is ready to go, as this recipe comes together quickly. 
  2. Remove the casing from the chorizo sausage, julienne the bell pepper, half the tomatoes, mince the garlic and red onions, and wedge the lime. 
  3. Preheat the oven to 350 degrees.
  4. CHICKEN: Season the chicken thighs on all sides. 
  5. In a large skillet, add 2 tablespoon of neutral oil. Sear the chicken on both sides and make sure they are crispy and golden brown. 
  6. Remove the chicken and set aside. 
  7. Saute the chorizo for 5 minutes. Do not touch it. Let it get crispy.
  8. Add and saute the red onion and garlic for 2 minutes or until fragrant. 
  9. Add the red bell pepper and tomatoes. Saute for 2 minutes. 
  10. RICE: Add the rinsed long-grain white rice and mix it well until the rice is a little toasted. 
  11. Add 2 cups of chicken broth or water. 
  12. Combine well, add back the chicken, and cover with a lid. 
  13. OVEN: Put it in the oven and bake at 350 degrees for 20 minutes or until the rice is fully cooked.
  14. Check to make sure that the rice is fully cooked. 
  15. Serve with some lime to brighten up the flavors, and enjoy! 

Notes

Mise en place - French term for having everything ready and prepped before starting to cook.
