Easy Air Fryer Chicken Tocino Recipe

Sweet, garlicky, tender, and juicy, chicken tocino is the perfect all-day breakfast when paired with garlic rice and fried egg. Best part is it is cooked in the air fryer for a no-fuss kind of meal.

Ingredients
  

  • 8 boneless skinless chicken thighs
  • Marinade:
  • ½ cup brown sugar½ cup pineapple juice3 tablespoon cane vinegar 2 tablespoon dark soy sauce
  • 1 tablespoon kosher salt
  • 1 tablespoon black pepper
  • 10 cloves minced garlic
  • 1 package of Mamasita Annatto Powder

Method
 

  1. Prep the marinade. Combine everything in a bowl. 
  2. Add the boneless skinless chicken to the marinade. 
  3. Marinate for 4 hours. For best results, marinate overnight. 
  4. Line your air fryer basket or tray with parchment paper for easy cleanup. 
  5. Air fry at 350 degrees for 25 minutes, flipping a few times to get a nice color.
  6. Serve it with white rice, and fried egg, and enjoy!

Notes

Pan Fry Method: 

  • Prep the marinade. Combine everything in a bowl with a lid.
  • Add the chicken to the marinade. 
  • Marinate for 4 hours. For best results, marinate overnight. 
  • In a skillet, add the chicken tocino in a pan with a little bit of water, around 3 tablespoon of water. Cover with a lid and let it steam for 5 minutes or until the water has evaporated. Medium heat.
  • Uncover the pan and cook until the chicken is fully cooked and caramelized.
  • Serve with white rice and a fried egg.
