Course: Pan fry
Cuisine: Pan fry

Ingredients

  • 6 - 8 pieces of skinless boneless chicken thighs
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoon of avocado oil for frying
  • 1 inch of julienned ginger
  • 1 tablespoon of minced garlic 3 cloves
  • Sweet Chili Lime Sauce:
  •
  • Zest and juice of 1 lime
  • 2 tablespoon Soy sauce
  • 2 tablespoon sweet chili sauce
  • 1 tablespoon sesame oil

Method

1. Prepare the Chicken:
  1. Start by seasoning the chicken thighs. In a small bowl, combine smoked paprika, garlic powder, onion powder, salt, and black pepper.
  2.
  3. Rub the spice mixture evenly over each chicken thigh, ensuring they are well coated. Set aside while you prepare the sauce.
  4.
2. Make the Sweet Chili Lime Sauce:
  1. In a separate bowl, whisk together the lime zest, lime juice, soy sauce, and sweet chili sauce until well combined. Set aside.
  2.
  3. Optionally, add a few drops of sesame oil to the sauce for extra flavor. Adjust the amount according to your preference.
  4.
3. Cook the Chicken:
  1. Heat avocado oil in a large skillet or frying pan over medium-high heat.
  2.
  3. Once the oil is hot, add the seasoned chicken thighs to the pan in a single layer. Cook for about 5-6 minutes on each side or until golden brown and cooked through.
  4.
  5. Remove the cooked chicken from the pan and set aside on a plate.
  6.
4. Prepare the Sauce and Finish Cooking:
  1. In the same skillet, add the julienned ginger and minced garlic. Saute for about 1-2 minutes until fragrant.
  2.
  3. Pour the prepared sweet chili lime sauce into the skillet, stirring to combine with the ginger and garlic.
  4.
  5. Return the cooked chicken thighs back to the skillet, coating them evenly with the sauce.
  6.
  7. Reduce the heat to medium-low and let the chicken simmer in the sauce for an additional 2-3 minutes, allowing the flavors to meld together and the chicken to absorb the sauce.
  8.
  9. Make sure the chicken is fully cooked through and the sauce has thickened slightly.
  10.
5. Serve:
  1. Once the chicken is cooked and the sauce has thickened, remove the skillet from the heat.
  2. Garnish with additional lime zest or chili oil.
  3.
  4. Serve the Sweet Chili Lime Chicken hot, accompanied by your favorite sides like steamed rice, roasted vegetables, or a salad.
