Asian Cucumber Salad

Spicy Asian Cucumber Salad is a showstopping side dish. It's spicy, tangy, sweet, salty and all around perfect balance flavor. The cucumber stays super crunchy even the next day!

Ingredients
  

  • 3-5 persian cucumbers*
  • 2 tablespoon low sodium soy sauce
  • 2 tablespoon rice vinegar
  • 1 tablespoon white sugar substitute with honey
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon chili oil - I love Momofuku

Method
 

  1. Assemble the sauce in a large bowl (soy sauce, sesame oil, sugar, rice vinegar)
  2. Add the chili oil. 
  3. Cut the cucumbers thinly. The thinner the better.
  4. Mix it all together.
  5. Serve and enjoy.

Notes

*English cucumbers also work but the Persian cucumbers are crisper.
* Honey or coconut sugar are great substitutes
