Air Fryer Chicken Sausage with Veggies - 20 minute meal

Ingredients
  

  • 1 lb chicken sausage
  • Half of a cabbage
  • 1 eggplant
  • Half of a red onion
  • ½ cup of frozen corn
  • 3 stalks of green onion white and green part separated
  • Sauce
  • 2 tablespoon of water
  • 2 tablespoon Thai sweet chili sauce
  • 2 tablespoon of oyster sauce
  • 2 tablespoon of sesame oil
  • 5 cloves of garlic mincedOptional: Chili crisp

Method
 

  1. Preheat your air fryer to 400°F.
  2. Cut the chicken sausages, cabbage, eggplant, and red onion into bite-sized pieces. Cut the white part of the green onion into 1-inch pieces and thinly slice the green part.
  3. In a small bowl, whisk together the water, Thai sweet chilli sauce, oyster sauce, sesame oil, and minced garlic to make the sauce.
  4. Add the chicken sausages, cabbage, eggplant, red onion, and frozen corn to the air fryer basket. Toss with half of the sauce.
  5. Air fry for 10 minutes, shaking the basket halfway through.
  6. Shake the air fryer basket again to toss the sausages and veggies then top with sliced green onion. Serve hot and enjoy!
