Air Fryer Chicken Satay with Peanut Sauce

This is my take on Air-Fried Chicken Satay with Peanut Sauce. Imagine succulent, juicy chicken thighs crisped to perfection in the air fryer, paired with a creamy peanut sauce. This is way better than takeout. You need to try this!

Ingredients
  

  • 1 lb 8 pieces chicken thighs (boneless skinless)
  • 1 tablespoon curry powder
  • 1 tablespoon avocado oil
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  •  
Peanut Sauce 
  • ½ can coconut milk 7 oz
  • 2 tablespoon creamy peanut butter
  • 2 tablespoon of red Thai curry paste
  • 1 tablespoon of fish sauce
  • 1 tablespoon honey
  • Juice of ½ of lime
  • Garnish with roasted peanuts cilantro, and green onions.

Method
 

Prepare Chicken:
  1. Cut the chicken thighs into thin strips, about 1 inch wide.
  2. In a mixing bowl, combine the chicken thighs, garlic powder, curry powder, salt and pepper. 
  3. Add some avocado oil and marinate for 30 minutes or preferably overnight in the refrigerator for more flavor.
  4. If cooking the chicken in 30 minutes, SOAK YOUR SKEWERS TO AVOID BURNING THEM. 
Preheat Air Fryer:
  1. Preheat your air fryer to 360°F (180°C) for about 3-5 minutes.
Skewer Chicken:
  1. Thread the marinated chicken strips onto skewers. 
Air Fry Chicken:
  1. Place the chicken skewers in the air fryer basket in a single layer, ensuring they're not overcrowded.
  2. Cook the chicken in the air fryer for about 8 minutes, flipping halfway through, until the chicken is cooked and nicely browned on the outside. 
  3. Adjust cooking time as needed based on the size of your chicken pieces and the air fryer model.
Prepare Peanut Sauce:
  1. In a saucepan, combine the coconut milk, peanut butter, red Thai curry paste, fish sauce and honey.
  2. Heat the mixture over medium heat, stirring constantly, until the sauce is smooth, thick, and well combined.
  3. Add lime juice at the end.
Serve:
  1. Once the chicken satay is cooked, serve it hot with the prepared peanut sauce on the side for dipping.
